It all started in 1978 in a small log building on
a dirt road across from the tiny McCall Airport by Rod and Melinda
Nielsen with the help of many good friends. It was a off-the-beaten
path location offering people a chance to escape the crowds of downtown.
Since then it has grown with McCall, changing with additions to
the building and the many new menus too!
The original menu introduced locals to
Mexican fare from Carne Asada to Tamales. The new restaurant peaked
interest in Mexican food with many people saying they had never
been out of Valley County and, indeed, never had anything quite
like it. It was a great challenge, but Melinda, who grew up in a
family of 13, equally loves cooking and people. Blending the home-style
Mexican with vegetarian and fresh ingredients helped the menu grow
tastefully over the years. Now with the addition of fish, steaks,
and ribs for those not in the mood for Mexican, there is just about
something for everyone.
In 1989, the purchase of a State Liquor
License gave birth to “Rodrigo’s” Cantina. After
many years of sipping on pre-mix Margaritas, customers welcomed
the chance to order their favorite cocktail over dinner. Rod and
the bartenders were challenged to come up with over 10 different
varieties acutely learning the art of Mixology! Now the locals frequent
the Cantina not only for the best Happy Hour, but to meet friends
in a “Cheers Bar” atmosphere. You may even run into
Rod once in awhile in between his flights, as he in one busy back-country
pilot too! Oops...now you know who put the tail of an airplane on
the roof!
Through the years decks were added and, due to the
long winters, became indoor dining areas that offer private group
seating for up to 35. Not giving up on decks, in 1999 another semi-enclosed
deck was added. In the summer months customers can enjoy outdoor
dining with great views of the airport and under the stars in the
evening.
New in 2004 was the enforcement of no smoking in public
places in Idaho including restaurants. While we enjoy a smoke free
atmosphere, we offer a small landing outside Rodrigo’s Cantina
for our customers who still wish to continue to smoke.
History’s not complete without
mentioning our great employees starting with Numero Uno: Margaret
Odom! She was there in 1978 cooking as the doors opened and still
runs anyone out of the kitchen who wants to compromise on quality!
She tried to retire after 25 Years, but we refuse to let her...no
one else can make those great tamales!!!
In a small town like ours we have hired just about everyone it seems,
even hiring their kids and now approaching the next generations.
We couldn’t have done it without the many blends of personalities,
skills and expertise that was offered to us along the way - Thank
